Fresh Tomato and Lentil Soup

I discovered this “recipe” for Greek lentil soup many years ago and it quickly became a favorite for our family. It is great for the extra tomatoes you may have in your garden, or in the fall and winter to use with canned or frozen tomatoes. This could be a frustrating recipe for those of you who follow recipes exactly, as I have never had specific amounts for the ingredients. But, no matter how I’ve made this, it always turns out great, and even when I have nothing in the house for dinner, I almost always have what I need to whip up this soup.

Lemon Scones

As we are enjoying the last of the summer fruit here in Pennsylvania, it seemed like a good time to share a variation of our family scone recipe. These were a favorite of mine as a kid, and they are still a treat when my mom effortlessly whips up a batch for breakfast when I go home for a visit. Now my boys look forward to lemon scones in our home and, especially since they are easy to make and a bit healthier than many other scone recipes, I make these often to accompany fresh fruit for an quick home made breakfast.

Summer Vegetable Sandwich

There is nothing like the freshness of summer vegetables, but sometimes I have one of those years where there is a bit too much of a good thing. This does not happen to be one of those years for me - perhaps now would be a good time to offer a big thank you to the scorching heat and an infestation of earwigs? Anyway, zucchini, eggplant, and peppers are some of those veggies I find myself looking to "use up" on certain weeks. Since I first made these many years ago they have become a favorite in our family and are a staple summer meal for us. This is a very loose recipe, so feel free to play around with the quantities and even the types of veggies used. The best part about this dish is that it works great with nearly any vegetables I happen to have around.
